Description

This no-cook, minimal labor recipe uses USDA frozen berries making it perfect for district breakfast menus. Students love the bright berries, creamy cocoa-vanilla flavor, and the fun “dipper” experience with familiar Quaker® Chewy Granola Bars.

Ingredients

USDA frozen mixed berries, thawed

 25 cups 9 lb. 3oz.
Yogurt, low-fat plain 6 ¼ cups 12 ½ lb
Vanilla extract 2 tsp  
Unsweetened cocoa powder ¾ cup 2.3 oz.
Quaker® Chewy Granola Bars 25% Less Sugar, Chocolate Chip, 0.84 oz. bars 100 each 5¼ lb.

Directions

Pre-Preparation – One day before service

  1. Place the frozen mixed berries in a perforated pan nested over a solid pan. Store in the cooler, covered, labeled, and dated to allow berries to thaw and excess liquid to drain into a solid pan.
  2. CCP: Store at ≤41°F.
  3. Add the yogurt to a large mixing bowl. Whisk in vanilla extract and cocoa powder until fully blended and uniform.
  4. Portion ½ cup (#8 scoop) cocoa yogurt into clear cups.
  5. CCP: Store overnight, covered, labeled, and dated at ≤41°F.

Preparation - Day of Service

  1. Top each parfait with ½ cup (#8 scoop) thawed, well-drained mixed berries.
  2. CCP: Cold Hold at ≤41°F
  3. Serve with two Quaker® Chewy Granola Bars for dipping.

Tips | Notes

  • The VCM can be used to mix yogurt with vanilla and cocoa powder, which is especially useful when producing very large volumes.
