Unsalted butter 1 cup  8 oz.
2% fat milk 1 gallon + 2 qts  
Water, tap  1 ½ gallon  
Vanilla yogurt, low-fat ¼ cups 3 lb. 2 oz.
Vanilla extract 2 tablespoons 1 oz.
Ground cinnamon 1 tablespoon 0.36 oz.
 Ground nutmeg 1 teaspoon  0.10 oz.
Ground ginger 1 teaspoon  0.07 oz.
Ground cardamom ½  teaspoon   0.04 oz.
Kosher salt 2 teaspoons  0.04 oz.

 

Directions

Pre-Preparation – One day before service

  1. Drain and divide pears: 12 ½ cups for folding into oatmeal and 12 ½ cups for caramelizing.
  2. CCP: Store overnight, covered, labeled, and dated at ≤41°F.
  3. Measure butter, milk, and yogurt into separate containers.
  4. CCP: Store both overnight, covered, labeled, and dated at ≤41°F.
  5. Measure oats, honey, vanilla, salt, and spices into separate containers. Store, wrapped, labeled, and dated in dry storage.

Preparation – Day of Service

  1. Prepare oatmeal by melting the butter in a large stock pot or steam jacket kettle over medium heat.
  2. Once the butter is melted, add the oats, and stir to coat.
  3. Cook, stirring occasionally, until the oats smell toasty and starting to turn lightly golden, about 4 to 6 minutes.
  4. Add the water, milk, ½ cup honey, salt, and half spice mix over toasted oats.
  5. Stir to incorporate the ingredients.
  6. Bring to a simmer and cook for 5-10 minutes, stirring occasionally.
  7. Next, stir in vanilla extract and the reserved 12 ½ cups of drained, diced pears.
  8. Continue cooking until oatmeal and pears reach 135°F or higher.
  9. Turn off heat and allow oatmeal to rest for 5-7 minutes.
  10. While the oatmeal is cooking, caramelize remaining pears.
  11. Line sheet pans with parchment paper and lightly spray with pan spray.
  12. Spread the diced pears in an even layer. NOTE: Take care not to overcrowd the pan or your pears will not roast well.
  13. Sprinkle remaining spice mix over pears and drizzle over 1 cup honey.
  14. Roast pears in a 400°F oven for 15-20 minutes.
  15. CCP: Cook to 135°F or higher.
  16. Hot hold, covered, until needed.
  17. CCP: Hold at 135°F or above.
  18. To serve: Use 6 oz. spoodle to portion oatmeal into a serving bowl. Top with 1 oz. yogurt using #30 portion scoop and finish with ¼ cup caramelized pears using #16 portion scoop.

Tips | Notes

  • Toasting the oats in butter develops a rich, nutty flavor and protects oatmeal texture.
  • Check the pears at the 15-minute mark to prevent burning, as oven temperatures can vary.
  • If you do not have all the spices just cinnamon may be used and it is still delicious!
