Directions

Pre-Preparation – One day before service

  1. Drain the red beans and store in the cooler, covered, labeled, and dated.
  2. CCP: Store at ≤41°F.
  3. Move the sausage from the freezer to cooler to thaw.
  4. CCP: Store at ≤41°F.
  5. Chop the onions, celery, and bell peppers. Store in the cooler, covered, labeled, and dated, until needed.
  6. CCP: Store at ≤41°F.
  7. Make the seasoning blend by measuring out spices. Store, covered, labeled, and dated in dry storage.

Preparation – Day of service

  1. Cook Rice: Steam or simmer brown rice until tender. Fluff with a fork.
  2. CCP: Hold hot at ≥140°F.
  3. Using the tilt skillet, set to med-high heat, sauté sliced turkey sausage for 5-7 minutes to develop flavor and get some nice color.
  4. Add onion, celery and bell pepper to sausage cook until translucent on medium heat 5-7 minutes.
  5. Add seasoning and cook until fragrant approximately 2-3 minutes.
  6. Next, add tomato paste, diced tomatoes with juice, chicken broth and beans.
  7. Reduce heat and simmer 10–15 minutes until saucy and aromatic and temperature reaches 165°F.
  8. Turn off heat and add lemon juice.
  9. Place sausage and beans in hotel pan and hot hold, covered, until assembly.
  10. CCP: Hold hot at ≥140°F.

Assembly

  • Base: Portion ½ cup cooked brown rice into each bowl.
  • Bean & Sausage Mix: Top with ½ cup of the savory red bean mixture.
  • Finish: Sprinkle with sliced green onions and add 0.75 oz. of Fritos® Original Corn Chips on the side or sprinkled on top (0.75 oz. single serve bag or 0.75 oz. portion from bulk bag) at service.
