Directions

Pre-Preparation – One day before service

  1. Wash, core, and dice apples. Prepare streusel topping according to sub-recipe. Store covered, labeled, and dated.
  2. CCP: Hold all cold items at ≤41°F.
  3. In a large mixing bowl, combine eggs, milk, applesauce, brown sugar and vanilla. Whisk until smooth.
  4. Add oats, baking powder, and cinnamon. Mix until fully combined.
  5. Fold in 3 lb. diced apples (reserve 1 lb. for topping).
  6. Spray full 4-inch hotel pans with pan spray, line with parchment paper and spray paper.
  7. Pour batter evenly into pans (2 pans total).
  8. Sprinkle remaining 1 lb. diced apples across the top.
  9. Add apple streusel topping evenly across both pans (sub-recipe below).

Bake

  1. Bake at 350°F for 30–35 minutes until set and lightly golden.
  2. CCP: Heat to 135°F.

Cool & Cut

  • Cool completely (30 minutes).
  • Cut each sheet pan into 24 bars (3" x 3").

To Serve (Grab-n-go format)

  • Place 1 bar into a wax sleeve.
  • Hold in hot pass thrus until service.
