Directions

Pre-Preparation – One day before service

  1. Prepare streusel topping according to sub recipe.
  2. Zest lemons; then in a large mixing bowl, combine eggs, milk, brown sugar, lemon juice, lemon zest, and vanilla. Whisk until smooth.
  3. Add oats and baking powder. Mix until fully combined.
  4. Fold in 2.5 lb blueberries (reserve 0.5 lb for topping).
  5. Spray full 4-inch hotel pans with pan spray, line with parchment paper and spray paper.
  6. Pour batter evenly into pans (2 pans total).
  7. Sprinkle remaining 0.5 lb blueberries across the top.
  8. Add lemon streusel topping (sub-recipe below) evenly across both pans.

Preparation - Day of Service

  1. Bake at 350°F for 30-35 minutes until set and lightly golden.
  2. CCP: Heat to 135°F.

Cool & Cut

  • Cool completely (30 minutes).
  • Cut each sheet pan into 24 bars (3"x 3")

To Serve (Grab-n-go format)

  1. Place 1 bar into wax sleeve.
  2. Hold in hot pass thrus until service.
