Directions

Pre-Preparation – One day before service

  1. Prepare maple streusel topping according to sub recipe. Place in the cooler.
  2. CCP: Store overnight, covered, labeled, and dated at ≤41°F.
  3. Next, in a large mixing bowl, whisk together eggs, milk, syrup, brown sugar, and vanilla.
  4. Add oats, baking powder, and cinnamon. Mix until fully combined.
  5. Fold in turkey sausage and cheddar cheese.
  6. Spray full 4-inch hotel pans with pan spray, line with parchment paper and spray paper.
  7. Pour batter evenly into pans (2 pans total).
  8. Sprinkle a light layer of everything bagel seasoning on top.
  9. Place in the cooler.
  10. CCP: Store overnight, covered, labeled, and dated at ≤41°F.

Preparation - Day of Service

  1. Sprinkle maple streusel topping evenly across both pans.
  2. Bake at 350°F for 30–35 minutes until set and lightly golden.
  3. CCP: Bake to 135°F.
  4. Cut each sheet pan into 24 bars (3" x 3").
  5. CCP: Cook to 135°F or higher.

To Serve (Grab-n-go format)

  1. Place 1 bar into a wax sleeve.
  2. Hold in hot pass thrus until service.
  3. CCP: Hold at 135°F or above.
