Directions

Pre-Preparation – Two days before service

  1. Move chopped frozen spinach to the cooler, to thaw.
  2. CCP: Store at ≤41°F.

Pre-Preparation – One day before service

  1. Place the thawed spinach in a strainer and press out excess liquid.
  2. Next, combine the white cheese sauce, chopped spinach, granulated garlic, onion powder, and crushed red pepper in a large mixing bowl. Using a rubber spatula stir to combine.
  3. Divide the spinach dip between two 4-inch hotel pans and cover with foil. Store overnight in the cooler, labeled, and dated.
  4. CCP: Store overnight, wrapped, labeled, and dated at ≤41°F.

Preparation - Day of Service

  1. Bake the spinach dip at 350 degrees, covered with foil, for 22 minutes. Stir to distribute heat.
  2. Return, covered with foil, to the oven and continue cooking for an additional 15-18 minutes. Or until the dip reaches 135°F.
  3. CCP: Cook to 135°F.
  4. Remove from oven and use a #8 disher to portion dip into bowls.
  5. CCP: Hold at 135°F.
  6. Sprinkle with parmesan cheese and smoked paprika. Serve each dip with 1.3 oz. Stacy’s® Multigrain Pita Chips (1.375 oz. single serve bag or portion about 11 chips from bulk).

Tips | Notes

  • Spinach dip does not need to be batch cooked throughout service. It will hot hold well, covered, for portioning
